Known as “vegetable caviar,” Termiti olives are irresistible—firm to the bite, meaty, and packed with authentic southern Italian flavor. Enhanced with fennel seeds, oregano, bay leaves, and a touch of peperoncino, they deliver a briny, herbal, and slightly spicy taste that makes them impossible to resist.
Cultivated by the Belfiore family on their farm in Matera, these olives are harvested from mid-September through mid-October, just as they begin to blush. Naturally varied in shades of purple, green, and black, they are never dyed or color-treated, showcasing their natural beauty. After sorting and brining in water and salt for 90–120 days, they undergo lactic fermentation before being jarred alla Contadina in the family’s own extra virgin olive oil.
