Funghi Cardoncelli, also known as King Trumpet Mushrooms, are named for their natural growth on the roots of cardo selvatico, a wild thistle native to southern Italy. A member of the oyster mushroom family, Cardoncelli are revered for their firm, meaty texture and delicate earthy flavor. The Murge hills, stretching across Basilicata and Puglia, are known as the “cradle” of this prized mushroom, where both spontaneous and cultivated harvests thrive.
Masseria Mirogallo partners with a neighboring farm specializing in funghi to cultivate the finest Cardoncelli. Immediately after hand-harvesting, the mushrooms are sliced thick, quickly blanched in wine vinegar, and then preserved in the family’s fragrant extra virgin olive oil. This time-honored method captures their hearty umami depth with a gentle pickled brightness, delivering a luxurious bite that tastes unmistakably of southern Italy.
