The DOP (Denominazione di Origine Protetta) designation ensures that every wheel is produced according to centuries-old methods, using milk sourced exclusively from the provinces of Vicenza, Trento, Padova, and Treviso. Once the partially skimmed milk is heated, coagulated, and pressed into wooden molds, the wheels are brined and then aged to perfection.
After five months of maturation, this mezzano (medium-aged) cheese develops a compact texture, delicate yeasty aroma, and a nutty, savory flavor with a subtle tang. Its balanced complexity makes it wonderfully versatile — slice it for cheese boards, grate it over pasta, or melt it into polenta and risotto.
